Delicious Meatless Chili

In honor of “Meatless Monday” I thought I’d share a family favorite –

Meatless Chili

  • 2 Tbsp Olive oil
  • 1 Green Pepper- Seeded and Chopped
  • Jalapeno Pepper – (Optional) Seeded and diced; amount adjusted to taste
  • 1 Jar MEESH’S ™ Marinara
  • 1 Cup Vegetable stock
  • 2 Tbsp Chili Powder
  • 1/8-1/4 tsp cayenne pepper – to taste
  • 1 1/2 Tbsp Cumin
  • 1 tsp cocoa powder (unsweetened)
  • 1 can Red kidney beans (rinsed and drained)
  • 1 can pink kidney beans (rinsed and drained)
  • 1 can White navy beans (rinsed and drained)
  • 1 can black beans (rinsed and drained)
  • 1 can sweet corn
  • Chopped cilantro
  • Sour Cream
  • Lime Wedges
Heat oil in stock pot over med heat until shimmering. Add peppers and cook until starting to soften. Add in rest of ingredients to beans and bring to a boil. Decrease heat, add beans, and simmer uncovered, for approximately 15- 20 minutes. Add in corn heat for additional 5 minutes. (If it is too thick you can add more stock)
Serve in bowls and top with chopped cilantro, sour cream and lime, if desired.
