Sauteed Lion’s Mane Mushroom

I had the pleasure of trying the Lion’s Mane mushroom last night for the first time. I had never even heard of this mushroom before I stopped by the Mariaville Mushroom Men tent at the new Spa City Farmers Market.

I was intrigued by the look of this mushroom. It was a large white mushroom that appeared to have a texture that did indeed look like the mane of a lion. I was going to try it on that alone but then I was told “It actually tastes like lobster when you cook it.” LOBSTER?! OK…..NOW, I was definitely getting it. And to me what goes great with lobster…..Steak, right? SO I went right to the next tent, Mariaville Farm.and picked up a FRESH, never frozen sirloin tip. I grilled up the steak with some veggies to medium rare with some Montreal steak seasoning rubbed on it before hand. Yes, JUST that. We wanted to get the full flavor of the meat and it was so full of flavor I am glad we did not add more seasoning.

I was told the best flavor comes from the mushroom when it is sauteed so that’s what I did. Recipe follows.

Sauteed Lion’s Mane Mushroom

  • Lions Mane mushroom cleaned and sliced
  • 1 small clove garlic -minced
  • 1 Spring onion – sliced
  • 1/4 cup parsley- minced
  • 1 Tbsp grapeseed or olive oil
  • pinch of sea salt
  • fresh ground pepper
  • splash of white wine
  • 1 Tbsp butter
  • lemon juice to taste

Heat oil in pan over medium heat until hot, add ingredients through black pepper. Lower heat and cook until mushrooms are a nice caramel color and are softened. Add a splash of white wine and increase heat to medium. Cook the wine and finish with butter until melted 1-2 minutes. Squeeze lemon juice and remove from heat.

Enjoy alone or on top of grilled sliced sirloin as shown.
